For the base:
Process cashews into small pieces in a food processor. Add dates and process until roughly chopped. Then add in coconut and brown rice syrup...process until you have a sticky dough. Press mixture into a loaf pan lined with parchment paper and set in the freezer. For the caramel: Process date in processor until roughly chopped. Add in rest of ingredients, but adding almond milk a little bit at a time until a smooth caramel forms. Spread caramel over the base. For the topping: Roughly chop peanuts and then place on top of the caramel, pressing down lightly. Melt your chocolate in the microwave or in a water bath on the stove, stirring every 15 seconds until completely melted. Drizzle chocolate over the top of mixture. Place back in the freezer for 20-30 minutes or until hard. Remove from the freezer, cut into squares and enjoy!
These Snickers squares are chewy, gooey and down right heavenly! There are no words that quite express how delish they really are. Why don't you treat yourself this weekend? You deserve it!
